Pine nut parmesan is one of my favorite toppings and is great on many dishes: pastas, salads, pizza, lasagna. It is delicious, nutritious and very easy to make. I love to have a jar of this around to sprinkle on foods. It has a wonderful nutty, cheesy taste – just fabulous! 

 

Pine Nut Parmesan

Ingredients

1 c Pine Nuts
1 T Nutritional Yeast
1 t Salt

Directions

Process ingredients together in a food processor.

I usually make mine just like this but if you prefer a drier texture you can also spread the parmesan out onto teflex sheets and dehydrate 1-2 hours until dries out.

I suggest storing parmesan in the fridge unless you know that the pine nuts are fresh as they can turn rancid with heat over time. Parmesan lasts well for several weeks in the fridge, if it lasts that long.
