Nori is one of the most nutritious foods around so I am always happy when I think of a new way to make it interesting and add to my diet. In this recipe veggies are mixed with an avocado and mayonnaise mix – of course, you know I’m using my hemp oil mayo! So it is super nutritious and loaded with healthy EFA’s. Getting healthy fats into your diet is great. They are not only beneficial to your health but they help clean out the bat fats from your cells and can actually help you lose weight. These veggie nori rolls are delicious and for health, it’s hard to beat a veggie/sea veggie combo like this! 

 

Veggie Nori Rolls

Ingredients

4-6 cups of shredded and chopped veggies, I used:

  • 3-4 Carrots
  • 1 Zucchini
  • 1 cup Cauliflower
  • 1 Red Pepper
  • 1/4 cup Parsley
  • 1/4 cup Red Onion

Avocado
1 cup Hemp Oil Mayo, or less if desired and depending on how big avocado is
Lettuce
Sprouts
Nori Sheets

Description

Prep vegetables by washing and peeling if necessary and then shred them with a grater or in a food processor. Mash the avocado in a bowl and then mix with the mayonnaise. Mix this into the shredded vegetables then on a sheet of nori, spread out about a half cup of the veggie mixture on one end. Top with lettuce and sprouts and then roll up. Wet the end with a bit of water so it sticks down.

I like to cut them at a diagonal in the center and then pile them on a plate to serve.
Makes a lot.

Assemble ingredients.

    Hey Robin,
    I just made your nori rolls and I have to say that they were really really delicious. Both my boyfriend and me really love them :). However, we had a little trouble with the texture. The nori became very wet and when you bit into the roll, the filling came immediately out on the other side. Do you have any suggestions for that?

    • Hi Jane, Glad you tried and liked them. They are such a healthy lunch. I love them too! re: wet nori: Sometimes the nori will not hold together well if it gets wet for too long of a time. It can depend on the brand also a bit but its more likely how long the filling was in it before it was eaten. To make it hold together longer what you can do is – lay a dry piece of lettuce down on the nori sheet first, then layer the filling on top of the lettuce leaf, so that it doesn’t sit right next to the nori sheet, and then add more sprouts or lettuce, or just wrap it up like that.
