This fruit cobbler recipe is a raw foods version made with tropical fruit and a wonderful change from the more traditional fruit cobbler recipes. I love it made with tropical fruits. But I am a serious tropical fruit lover know I will have to move to the tropics one day, at least for the winters! 😉 The topping has nuts and coconut that go really well with the mango, pineapple and papaya, but even so this recipe would work great to make a delicious peach cobbler recipe or a berry or apple cobbler recipe as well. Just substitute fruit and you can lower the coconut and add a little more walnuts and almonds. I love playing with recipes but even so I have made this one exactly as is a few times, and this tropical fruit cobbler recipe has been really successful at a few various gatherings. 

The photos below are of the trays I made of this cobbler recipe to bring to a pot luck a few years ago.  I brought 2 huge roasting pans of it and it was a huge success. Even with so much (I love lots of food at pot lucks!) it still got all eaten!


Tropical Fruit Cobbler Recipe


Fruit Base:
1 Banana – peeled & broken into large pieces
1 Mango  peeled, pitted and diced
1 cup Pineapple chunks
1 cup Papaya chunks
½ Lime – juiced
2 tsp Psyllium

1 cup Macadamia
½ cup Walnuts
½ cup Almonds – soaked
½ cup dried, shredded Coconut
1 cup Dates
1 tsp Vanilla


Process fruit just until the pieces are still in fairly large to medium size ( ¼“ to ½“ sized) chunks. Mix the psyllium and lime juice in with the fruit and pour into bottom of 9” pan. Pat down flat.

Process the nuts and dates in a food processor until still coarsely chunky.  Add the rest of the ingredients and pulse chop them in together until still med-coarsely chopped and mixed in thoroughly. Sprinkle the nut-date topping layer over fruit evenly and press over gently to cover and flatten.  Sprinkle some coconut flakes on top.  Serve and Enjoy!
