This layered salad recipe is so delicious and bursting with so much nutrition it makes you feel like a vibrant, energetic and blissful Goddess, or God, after eating it.  It is not fully raw but the cooked additions are abundantly healthy cooked choices, worthy of Goddesses. This layered salad recipe is a delicious combination of flavors and textures  and it is fun to eat. It keeps changing appearance as you mix the layers and every bite is different.

This salad is huge. It is a full meal salad for a hungry Goddess. I made mine into a lunch time meal and finished it off as an afternoon snack, so be warned. You may want to reduce the portions.  However, this is one of those dishes that I don’t feel bad about eating a bigger portion of, as it is mainly made up of super nutritious fresh produce.

 

Make Mine Raw

This layered salad recipe is not fully raw. There is a grain bottom layer on the bottom. Now those who know me will know that usually I stay away from grains. I really don’t think they are very healthy compared to all of the other abundantly nutritious produce we have to choose from. My years as raw vegan, almost fruitarian, really steered me away from grains. However, they are filling and warming, which helps in the winter.  So, I am choosing my favorite and most nutritious choices, and to be honest this layer really helps to make the Goddess bowl special.

If you would like to stay all raw ..and who could blame you! The bottom layer can be substituted for zucchetti, aka zucchini pasta (click that link to see how to make it), or parsnip rice or you can just leave this layer out and build up starting with the greens.

 

My Secret Tell

This is very interesting, but something I haven’t told many people before. I have 2 little bumps, one just above my lip to one side and one on the side of my nose. They never were very big, but they were definitely there and when I went all raw, they went away.  That was great. I definitely felt and looked rejuvenated eating raw foods, but it’s cool to actually see physical proof like that. Now that I have started eating a little bit of cooked food, if I ever eat too much it will show up and the bumps come back. I will go back to eating all raw and they are gone.  This is my reminder, right on my face! I can only imagine it clears up any other little things I don’t see inside the body as well.

 

Cooked vs Raw and Kouchakoff

This ‘cooked’ salad is actually still almost all raw. If I ate this frequently my bump would not appear. There was an interesting study done in 1930 by a scientist named Kouchakoff, who studied the effects of eating different foods on the blood. He found  that  after eating cooked foods the body produced leukocytosis, an increase of white blood cells, in the blood. The white blood cells come to clean the blood from unknown or harmful substances. Leukocytosis didn’t happen with eating raw foods, and it often didn’t happen when a certain amount of raw foods were eaten with cooked foods.  There were different levels for different foods.

So, while this is listed as a ‘cooked’ salad, it is an awesomely nutritious salad that you can feel 100% great about eating! ..and feel like a Goddess afterwards.

The Layers

Layer 1 The Grain Layer

1 cup of (choose 1):
Brown Rice
Soba Noodles
Quinoa

Goddess Base Grain Layered Salad Recipe

Layer 2 The Green Layer

2 cups of (choose 1, or mix and match):
Chopped Kale
Baby Spinach
Mixed Lettuces
Chopped Herbs: Parsley, Cilantro, Chives, Basil Leaves, etc

Layer 3The Vegetable Layer

1 ½ cups of (any, variety is great):

Tomato, Cucumber, Red Pepper, Zucchini, shredded Carrots, shredded Beets, Avocado, Mushroom, Broccoli, Cauliflower, Celery, Red Onion, Green Onions, Sprouts

Layer 4 – The Nuts, Seeds or Beans Protein Layer

½ cup of (choose 1, 2 or 3 options):

Seeds: Hemp seeds, Pumpkin seeds, Sesame seeds, Sunflower seeds
Nuts: Walnuts, sliced Almonds, Pecans, Cashews
Beans (cooked): Chickpeas, Black beans, White beans, Lentils

Layer 5 Surprise Flavor Layer

½ cup of (choose 1, 2 or 3 options):

Pomegranate seeds, Mandarin Orange sections, Dried Cranberries, diced Apples, Olives, Artichoke hearts..

Layer 6 The Dressing

Ginger Date Dressing
Tahini Miso Dressing
Nutty Sweet Coconut Lime Dressing

These dressings are all sweet creamy and abundantly nutritious, just the way a Goddess bowl dressing should be. Of course the coconut lime dressing is just a thought at the moment. I love new recipes, and will post it if it’s as amazing in real life as it is in my head. I have a very good feeling about it.
