This vegan gumbo soup recipe makes a very thick, rich and hearty soup. Okra, as well as its flavorful spiced base, is the superstar and most characteristic part of Gumbo soup. The word gumbo itself comes from an African word for okra.  While gumbo soups are generally meat or seafood filled, this plant empowered version gets its wonderful thick and hearty texture from the addition of beans, mushrooms and, of course, loads of vegetables. This Thai soup recipe is one of my very favorite soups. It is a tomato based soup blended with coconut and avocado for a dreamy creamy texture. Thai food is often spiced with ingredients that can be hard to find in many areas of  North America, and so I have a version that will replicate the authentic Thai seasonings with ingredients more readily found locally. Our celriac, leek and kale soup recipe this week features the cool and unusually ugly looking vegetable celriac and also leeks, which mom & I picked up at the market yesterday morning. Celriac is amazing in soups. It does not have a strong taste It is fairly mild and tastes somewhat like celery, but not as nearly as assertive, celriac is much more mellow. After you peel all the knobby parts off of it the inside has a texture much like a rutabaga or turnip and I think it is quite a nice change from that or potatoes in vegetable soup recipes. This soup also has kale as I am on a bit of a kale kick and trying to eat as much of it as I can.  It is quite an ecclectic spice mixture and I knew I was pushing it a little with my combination but I, and others, think it turned out to be quite fantastic.

This soup recipe is for one of my favorite soups. Miso soup is a raw soup, but I usually heat it up in a pot on the stove, being very careful not to get it too hot. Which is a little tricky and requires that you watch it. My rule of thumb about heating raw soups is to use your own skin, or finger, as a guideline. If the water is too hot and will hurt you it will start destroying the valuable enzymes in food too. Also, miso is a fermented food filled with probiotics and so we really want to keep those alive, because they are so great for our own digestive systems.  || Read more

I have been thinking lately about my plans for this website. One of my goals is to get up my favorite recipes that can sustain anyone on a 100% raw lifestyle or  can up the health quotient of any diet. I have a collection of these favorite recipes that I make and eat regularly. Most are my own recipes but sometimes I come across a delicious super healthy dish and  love it when I can share that also. Anson made this soup at one of Fatma’s pot lucks a couple years ago. Soup’s on! This tomato soup recipe is all raw and so still contains all of the enzymes and nutrition found naturally in the fresh off the vine tomatoes, basil and avocados. Avocado and almond milk give the soup a rich creaminess and the fresh herbs give it a wonderful flavor. Every weekend Mom and I make a big pot of soup together. It’s part of getting Mom back into and comfortable cooking and working in the kitchen again.. so it’s kind of a therapy thing. But cooking is a great bonding activity to do together so it is nourishing in different ways and has multiple benefits.  Mom sometimes tends to lean towards comfort foods these days and this is one of those recipes. I would have left out the potatoes and substituted other vegetables and you can do that if you like. That’s the beauty of soups, they are very adaptable.
