I think this festive chocolate and coconut cream cake has it all. It’s chocolate macaroon crust contrasts wonderfully with the smooth and sensual vanilla flavored coconut cream center. But the part that really pulls it all together and makes it wonderfully festive is its luscious topping with pomegranate seeds mixed into a thick chocolate ganache creating an awesome texture. My inspiration for this oatmeal, coconut date cookies recipe was wanting a sweet cookie with a baked feeling but made with my rawkalicious cookie base.  I am always looking for a use for my left over alomnd pulp from making almond milk, so I used this, but you can use ground almonds, or almond meal. || Read more
