Today I have more of a breakfast, or dessert, idea for you rather than an actual recipe. A few ideas actually and a few variations on these papaya bowls and granola chia parfaits too. Andre came up with both of these at the Lotus Heart while I was there. He’s a master with mixing and matching complimentary flavors and textures. And although the flavors are delicious together, I think it is the texture combination of crunch and silky smooth with juicy fruit that makes these layered dishes really work.  || Read more

This fabulous warming filling delicious sweet potato tomato soup recipe is guaranteed to go over well!  It’s called a Gypsy Soup because it’s one of those soups that you can switch up the vegetables to easily. This easy massaged kale salad recipe simplifies the process of making it, so it’s a breeze to make and enjoy at home often. It does take a little time to massage the kale but other than that it is easy. I love green curry. I make it often and it changes everytime according to what vegetables I have on hand, so this Thai green curry recipe is very adaptable. The vegetables in this recipe are some of my favorite, so this is a great initial green curry recipe to follow. But what really makes a Thai green curry is the sauce, which as you may know, is very different from an Indian curry.  || Read more

This salad was inspired by a list of ingredients written in a cookbook binder by Andre at Lotus Heart. They read: beets, carrots, pecans, mint, lime, balsamic vinegar and arugula of course, or something like that. Maybe I added a couple or left a couple ingredients out, but the main thing is that the final salad was really delicious! ..and we now have an actual recipe to follow and go with!  || Read more

This kale salad has been my favorite lately. I made it and we all loved it, and I I made it again the next night. That’s a sign of real love! The smoked paprika is not overpowering and combines well with the sweet apple. But it’s not only the taste that is fantastic in this salad, it has a great texture as well. || Read more
