Today I have more of a breakfast, or dessert, idea for you rather than an actual recipe. A few ideas actually and a few variations on these papaya bowls and granola chia parfaits too. Andre came up with both of these at the Lotus Heart while I was there. He’s a master with mixing and matching complimentary flavors and textures. And although the flavors are delicious together, I think it is the texture combination of crunch and silky smooth with juicy fruit that makes these layered dishes really work.  || Read more

This easy massaged kale salad recipe simplifies the process of making it, so it’s a breeze to make and enjoy at home often. It does take a little time to massage the kale but other than that it is easy. This favorite salad is delicious and loaded with nutrients as kale is the most nutritionally rich vegetabe there is!  The technique is easy and the basic recipe includes only 4 ingredients. Then you can add other favorite ingredients to change it up and create your own version of it with what you have at home.

This salad was inspired by a list of ingredients written in a cookbook binder by Andre at Lotus Heart. They read: beets, carrots, pecans, mint, lime, balsamic vinegar and arugula of course, or something like that. Maybe I added a couple or left a couple ingredients out, but the main thing is that the final salad was really delicious! ..and we now have an actual recipe to follow and go with!  || Read more

This kale salad has been my favorite lately. I made it and we all loved it, and I I made it again the next night. That’s a sign of real love! The smoked paprika is not overpowering and combines well with the sweet apple. But it’s not only the taste that is fantastic in this salad, it has a great texture as well. || Read more

This kelp noodles recipe is not only delicious but so easy to make as well. Kelp noodles provide a great alternative to pasta and the Japanese inspired flavors of sesame and ginger in the dressing goes very well with them.

I think this festive chocolate and coconut cream cake has it all. It’s chocolate macaroon crust contrasts wonderfully with the smooth and sensual vanilla flavored coconut cream center. But the part that really pulls it all together and makes it wonderfully festive is its luscious topping with pomegranate seeds mixed into a thick chocolate ganache creating an awesome texture. Taste, texture and ingredients with nutrition, make this a total winner for my favorite cake of the year!  || Read more

I am so excited to share this raw spinach dip with you and I know that you are going to love it too! I have got this dip down. This is very close to that spinach dip that get’s served with pumpernickel bread. That was my inspiration, although it feels like a lifetime ago since I have tasted it.
