Rawkalicious cookies

The Rawkalicious Cookie recipe is a wonderful amalgamation of superfood ingredients, filled with goji berries, hemp seeds, cacao, pumpkin seeds, walnuts and more. These cookies are raw and dehydrated, which keeps all the vital nutrients and enzymes intact and at full force.

If you don’t have a dehydrator, you can place in the oven on the lowest temperature and keep the door open if your oven doesn’t go very low. Ideally the temperature stays below 115 degrees. But you do the best you can with what you have. If the temperature is a little higher the cookies will still taste delicious and be filled with superfoods.

I love these cookies for breakfast!

How to Make Rawkalicious Cookies

 

 

Rawkalicious Cookies Recipe

1 c Almond pulp – left over from making almond milk, or grind dry almonds to make almond flour
1 c Walnuts – crushed
2 Bananas – mashed
½ c Currants
½ c Sesame seeds
½ c Coconut flakes
½ c Cacao nibs
½ c Pumpkin seeds
¼ c Goji berries
¼ c Honey
¼ c Hemp seeds
1 t Vanilla
½ t Cinnamon

Directions:
First soak pumpkin seeds and goji berries together in a bowl with just enough water to cover them for a couple hours.
Then mix the rest of the ingredients in another mixing bowl.
Drain and add the gojis & pumpkin seeds and mix well.
Drop by spoonfuls onto Teflex and slightly flatten.
Dehydrate for 4-6 hours at 115 degrees.
Flip onto mesh screen and continue dehydrating for another 10-12 hours.

    hi was wondering how long these cookies last? if i vaccum seal them would they stay fresh for a month or two?

    • I think they would stay fresh for a month vaccum sealed.. and they will stay longer the more dry they are when dehydrating.

    So if you are using a low temp 115 degree oven to dehydrate the cookies, would the time in the oven be the same as what you put for using the dehydrator?

    • Hi, I haven’t actually tried to make these in the oven. Theoretically if your oven was at 115 degrees they should take about the same time.. However, it may be hard to get an oven to be exactly 115 degrees (mine starts at 150 degrees) and in a dehydrator there is a fan circulating air – so it will be a little different.
      I would check them within an hour, and periodically check on them more frequently in case. I think they may be be ready quicker in an oven. I’d love to hear your results if you try it!
