Delicious Apple Pie and Coconut Seed Crust Recipes

This apple pie is as delicious as Grandma’s but comes with added benefits. It has living enzymes and is bursting with flavor and nutrition. We have replicated the soft apple texture of the pie filling and set it into a delicious coconut seed crust. You will be amazed at how similar this tastes to the cooked version. It is still sweet and decadent but also with a pure clean taste. If you like apple pie, you will love this! 

Raisins help to make the pie sweet but are barely distinguishable in it after it’s finished. The psyllium is what gives the filing its firmness after it sets so it is easy and beautiful to cut and present.

You will need to have a pie crust ready first. I am posting the Coconut Seed Crust below. But this is also wonderful in  a delicious Date and Nut Crust also, recipe for that coming soon.

Apple Pie Recipe

Ingredients

4 Apples (3 c sliced)
½ cup Raisins
½ cup Agave
½ Lemon – juiced
3 Tbsp Psyllium
½ Tbsp Cinnamon
¼ tsp Nutmeg
Dash of Allspice and Salt

Directions

Have pie crust made and ready first. Process all ingredients except the 3 cups of sliced apples in a food processor. Transfer mixture to bowl and add the reserved sliced apples; mix well to combine. Pour pie filling into crust and allow to settle for an hour before serving. Makes one pie. This can be frozen and de-thawed to serve at a later time.

Coconut Sunflower Seed Crust

Ingredients

1 ¼ cup Coconut
1 cup Sunflower seeds
½ cup Dates
2 Tbsp Honey
½ tsp Vanilla
Dashes of Cinnamon and Salt

Directions

Coarsely chop sunflower seeds in food processor. Add the rest of ingredients to processor and combine well. Oil a pie pan with coconut oil and then transfer the filling into it, pressing down to form crust. Because of the sensitive nature of flax seeds, a pie made with this crust should be stored in the refrigerator and eaten within 3-4 days.
