This corn chowder is vegan and made creamy with coconut milk, which has healthy fats your body utilizes well, and medium chain fatty acids which help to dissolve the bad fats in cells. Coconuts are very nutritious and so a great choice for making soups creamy.  Corn is a food that although I love, I don’t eat very often as it is high in carbs and is often GMO. I usually only buy organic but we got a lot of fresh produce this week from a local farmer that was mostly, but not certified organic. At least no pesticides were used!  

So as Mom & I often make a soup together every weekend, we decided to turn our abundance of corn into this corn chowder. Perfect day for it too, it’s a cold rainy day today!

I have to admit that it was delicious and felt to me like a real comfort food. 

 

Corn Chowder

Ingredients

6-8 Corn – kernels, cut off of the cob
1 ½ (or 2 small) cooking Onions – chopped
2 Celery stalks – sliced 3 times lengthwise and then finely sliced
¼ cup Parsley – chopped
¼ c Chives – finely sliced
1 large Sage leaf, or ½ t dried Sage
1 Thyme branch, or ½ t Thyme
½ can of Coconut milk
1 Tbsp Tamari
¼ tsp Turmeric (gives a great rich color)
Salt, pepper and cayenne to taste

Directions

Place corn kernels and one small chopped onion in pot and cover with water. Bring to a boil on stove and cook for 20 to 30 minutes. Chop remaining vegetables while corn is cooking. Then transfer cooked corn and onion to a blender and blend. Return to pot and add the chopped vegetables and herbs and continue cooking for another half hour. Then bring to low heat and add coconut milk, tamari and salt and pepper as desired.

I didn’t add any salt or pepper to the pot but I did add cayenne individually to my bowl.. as I’m the only one around here who likes spicy corn chowder. But I like spicy everything!

Chop vegetables and herbs while corn is cooking.

Blend corn and then add the chopped vegetables.

Continue cooking then add coconut milk, tamari and seasonings as desired. Cook for a little longer, about half an hour and then it’s done.
