This delicious colorful salad was one I ate a lot of when I first went raw. This salad keeps well for days in the refrigerator and so I would make large batches of it. It is still one of my favorites that I make often. I like it best when the ingredients are chopped quite small so they really soak up the dressing. Strawberry Pecan Salad is a salad that it seems everyone loves! It’s elegant yet fun, delicious, sweet and I love this Poppyseed Dressing to go with it.  It is a little different from the traditional white creamy sweet one you often see with it. I have an amazing raw vegan mayonnaise recipe that I am about to share with you. This is one of my favorite secret recipes now being disclosed! ; ) I usually make this recipe with olive oil, and love it like that.. but I thought I would experiment and try it with hemp oil and see how it would turn out. To be honest I expected it to not taste quite as good, and maybe be a little green – but I was wrong. It’s wonderful and delicious and is now my new favorite. This butternut squash soup is thick, creamy and comforting.  The coconut milk gives this soup its smooth creamy texture and is very nutritious with healthy fats. Coconut is known to have the medium chain fatty acids known to help dissolve and clean the bad fat from the body. Nutritious, comforting and delicious makes this soup a winner in my books!

If you want to eat a lot of raw foods or are planning on going raw it’s a good idea to get used to eating salads! I never used to like salads, and if I can become a salad person, anyone can.  Trust me, they grow on you!!  Now I almost always have a salad as a side dish, but also I often will make this big salad as a main dish – and this Big Bowl Salad is it, or the base for it. Sometimes I also will add nutmeat (recipe coming) or steamed vegetables to fill it out and warm it up, which is a nice change.
